Who doesn’t love pizza? This is easy and healthy. Feel free to mix it up with your favourite toppings.
Ingredients:
- 1 tablespoon olive oil
- 3 zucchinis’, cut into ¼ inch thick rounds
- 1/3 cup of marinara sauce
- ½ cup finely grated mozzarella
- ¼ cup pepperoni minis
- Salt and pepper and/or Italian seasoning for taste
Method:
- Preheat oven to 180 degrees
- Heat olive oil in a large skillet
- Working in batches, add zucchini and cook, flip once until golden (maybe 1 or 2 minutes on each side)
- Place zucchini rounds onto a baking sheet, top zucchini with marinara, mozzarella and pepperoni minis
- Place into oven until cheese has melted (only a few minutes)
- Serve immediately and dust with seasoning
